Ice cream is a special treat. That creamy mouth feel, the sweetness that makes your mouth water… You know what I mean right? So when we decide we’re gonna eat low carb or keto, this question is going to come up eventually…

Can I Eat Ice Cream On The Keto Diet? 😱

You can if it’s Keto ice cream! And if you’re an ice cream fan like me, then I’ve got good news for you. The Keto ice cream recipe that I’m about to share with you is AMAZING!

When I made this ice cream for the first time (back some time in 2019) I adapted it from another recipe that was shared with me by one of my clients (I’m not sure where it came from originally), and OMG!…

It’s so friggin good.

It’s just like real ice cream – except you have to leave it out for fifteen minutes to soften a bit, otherwise you might break something trying to dish it up…

Why Was I Making Keto Ice Cream Back In 2019?…

Well back then it seemed like every second person I spoke to was on the Keto diet.

I’d been mulling over trying Keto myself, and I guess between my thinking about it, and attracting others who were also thinking about it, combined with the fact that it’s a really popular way of eating because it works for so many people, well it just kept popping up in conversations!

Keto Is More Than A Weightloss Diet

I know now that one of the great things about eating a low carb or keto diet is that it can actually be a permanent lifestyle change (unlike most other ‘diets’ that people use to lose weight), and that’s why it’s not a ‘fad’ and it’s not going away any time soon.

It also has massive health benefits even when weightloss is no longer required.

The Roller Coaster Of Life Long Weight Issues

I’ve actually been overweight for much of my adult life, but I hadn’t been as heavy as I found myself to be eighteen months after moving back to New Zealand, for about 25 years.

And what really got me looking into Keto initially was seeing a photo of myself at my nieces wedding a couple of years ago.

That was when I realised that I was looking kinda chunkier, rounder and larger than I wanted to believe. In fact, I was pretty mortified at what I saw.

So I decided that the time had come to get this body back into some kind of smaller, less round, and healthier shape.

That’s when I started experimenting with keto recipes and realised that using essential oils in keto foods was going to be perfect because they add no carbs or sugars, but they do add tons of flavour!

So I’m sharing the recipes I’ve made in the past, because they’re worth sharing. Here’s the ice cream recipe. Enjoy!

Wild Orange & Chocolate Chip Keto Ice Cream

This delicious keto ice cream recipe is simple and tastes amazing. Why not get creative and use the base recipe but change it up by using other doTERRA essential oils for flavouring. Some examples could be other citrus oils, or peppermint, or if you're keen you could experiment with spice oils such as cinnamon, clove or cardamom.

Ingredients
  

Instructions
 

  • Separate the eggs between two bowls.
  • Add the cream of tartar to the egg whites and beat them with a mixer until soft peaks form.
  • Slowly add the Erythritol sweetener and beat for another minute.
  • In a separate bowl, beat the cream until peaks form.
  • In a third bowl, whisk the yolks.
  • Chop the chocolate or chocolate chips into small pieces in a blender or grate.
  • Fold in the egg whites into the whipped cream (do not stir).
  • Fold in the egg yolk mixture.
  • Add the chocolate and 12 drops of Wild Orange essential oil
  • Fold until well combined
  • Pour the mixture into a freezer-friendly container and freeze until firm.
  • Remove from the freezer and allow to soften for 15 minutes before serving. Top with berries and/or nuts if wanted.

Notes

Note 1 – The secret to making this yummy Keto ice cream creamy and delicious is folding the whites into the cream – not stirring! This keeps air in the mixture, making it light and creamy.
 
Note 2 – If you can’t find powdered erythritol, put granulated erythritol into a blender and whizz it up until it reaches a finer, powder like consistency. I used my Thermomix for this, but even if you have a bullet type smoothie maker it should do the trick.

Don’t Like Orange & Chocolate? Try Another Variation!

You don’t have to limit yourself to the orange and chocolate flavor for this ice cream. Mix it up. This is the beauty of using the essential oils for flavoring – you have so many options!

Just imagine…

Lavender (go easy on this oil as it has a strong flavor), Citrus Bliss (that’s all the citrus oils plus vanilla – yum!), any of the citrus oils such as Lime, Lemon, Grapefruit, Bergamot or Green Mandarin, or even herbs such as Rosemary (could be interesting…), Cardamom, Peppermint, and more.

And when it comes to the sweetener, if you’re not concerned about carbs, swap out the erythritol for date sugar or coconut sugar, or your sweetener of choice.
